Characteristics of the Picual olive oil
We have made a single variety of olive oil with a golden color and a bouquet full of fruit such as bananas and figs. With notes of fresh herbs, green almonds and green tomatoes.
The average intensity of bitterness gives the oil and a unique personality.
This olive oil is ideal for the preparation of stews, seafood, garlic prawns, bacalao al pil-pil, vegetable wok dishes, soups and all kinds of sauces.
This black olive is responsible for 20% of worldwide olive oil production and is rich in vitamin E and polyphenols.
Another characteristic of Picual olive oil is the high content of (monounsaturated) oleic acid that can make up more than 80% of its lipid profile. Together with its low content of polyunsaturated fatty acids, this ensures that Picual olive oil is one of the most stable types of olive oil and is extremely resistant to oxidation and rancidity.
That is why Picual olive oil is ideal for use in high-temperature preparations, because it retains all its qualities even with several heating cycles.
