All our olive oils are later harvest. When the olives change from green color to purple / black olives. This makes our olive oil suitable for hot and cold preparations.
(Olive oil from green pressed olives is very fruity but due to the high concentration of chlorophyll not suitable for hot preparations)​​​​​​​
