At the end of November and beginning of December we got back to work, literally and figuratively. We knocked the olives out of the olive trees with our sticks.
They were pressed the same evening.

After a rest period in which the remaining water and residue sinks to the bottom, the extra virgin olive oil comes to my 'lab' in Tervuren. Here I mix the oil of different types of olives into our super tasty EVOO.
